The easiest thing I have done all week was baked this salmon!
And it’s perfect!
Preheat oven to 450°F
Simple pop salmon cut into 1/2lb pieces into the oven covered in olive oil, salt, and pepper. I cut up some heirloom tomatoes and layered them under the salmon. Let the salmon bake for 15 minutes and pull it out of the oven. While it’s cooling chop some basil, I used black & Thai basil, and sprinkle over the top. Finally add a splash of fresh lemon juice and boom. Dinner!
I had some frozen peas and some fresh asparagus. I did a simple saute on those guys with some olive oil, salt, pepper, and red pepper flakes and boom. Side dish!
