Eat That: Cardiff-Crack & Tomato Sammie

If you live anywhere near San Diego you have to try Cardiff Market’s Crack: a super prime cut of meat that is marinated perfectly for the grill, oven, or stove top. This stuff is so good it earned the name ‘Crack’..I mean COME ON! Seaside Market, the evil genius behind this addictive substance, even have an entire website devoted to the stuff. In fact, you can order it online!!! That’s pretty cool.

Anyway, for the Memorial Day weekend and in honor of my husband, a service member who is currently deployed, I decided to make one of his ‘most favorite meals’. I giggle to myself as I write that because my dear sweet husband commonly says that something I make is his ‘most favorite meal…that is to say, he really really really likes it and hopes to some day see me make it again. I love the crap of of that man! It warms my heart to know that people like him truly do exist; and blessed that I get to be one of the people who love him.

So for him…

The Cardiff-Crack Tomato Sammie

Slice of really good bread

Cheese (try Purple Haze from Cyrus Grove Creamery: a vegetarian goats milk cheese from CA flavored with lavender & fennel pollen, it’s what I used)

2.5 ounces of Cardiff-Crack (per-cooked); or any really cool quality meat

Sliced Tomatoes

Basil ( I used black & traditional basil from my little garden)

Drizzle of balsamic

Salt & pepper to taste

Slice of really good bread; I used a black rye from Whole Foods Market.

This recipe should be pretty much self explanatory but…

Toast your bread and cheese. Get really good bread, from a local bakery if possible. It most likely won’t have all the crap in it, you’ll be supporting a local business, and it’s going to taste so much better!!

Heat up your meat- I originally cooked mine medium and thus fatter sections are more rare. Thus, when I reheat I get a nice medium to medium well.

Assemble. Layer the meat pretty like on-top of your melted cheese. Gently place sliced tomatoes on top of meat. Hand tear the basil and sprinkle over the top of your sammie. Finally, gentle pour balsamic over the top. Lastly, sprinkle pepper & salt to taste.

Sit your ass down and enjoy.
